Grape varieties: 80% Tempranillo, 30% Mazuelo and Old Garnacha

Characteristics:
Made from grapes grown at high altitude on south-facing slopes of the Sierra de Cantabria mountain range. Rocky un-irrigated soil which gives low yields per hectare. Old, indigenous vines perfectly suited to the rolling terrain of the area.

Vinification process:
The grapes are destalked. Medium-length maceration to combine a balance of intense colour and the fruity style of a modern wine with aromas and flavours of ripe berries.
Fermentation takes place in stainless steel vats with temperature controlled by cooling to 25-28ºC and maximum hygiene.

Natural fining by cooling and slow decanting so as to maintain purity and a high level of aromas without movement or oxidisation.

Ageing:
12 months in natural, non-toasted, American oak casks that allow the perfect blending of the fruit and the mellow tannin from the oak, preserving the wine’s own characteristics.

Wine-tasting note:
Red wine with a medium depth colour, aromas of ripe fruit combined with a slight hint of vanilla. In the mouth it has finesse with fruity tannins and a smooth, harmonious and persistent flavour. A well-structured wine which displays excellent ageing potential, maintaining a low level of oxidisation and a positive evolution.
