Characteristics:
This wine comes from organically cultivated
vineyards. Organic vegetable fertilizers are used
whereas insecticides and herbicides are not.
The vines grow on relatively poor and un-irrigated
limy-clayish soil at an attitude of 600 metres.
The healthy soils, ventilation and the type of land in
this area allow for quality and profitable organic
cultivation. The vines are between 10 and 20 years
old and the average annual production is 5000
KG/Ha.
Vinification process:
The grape is destalked and fermentation is
temperature controlled. After a gentle pneumatic
pressing the wine is remounted. Maceration in
stainless steel vats lasts for 15 days.
Ageing:
6 months in new oak casks.
Wine-tasting note:
Deep cherry peak. Intense in the nose with a ripe
fruit of the forest aroma. It has a slight hint of
vanilla and coconut.
It’s fresh, ample, sweet and silky in the mouth and
has a long and persistent finish that is elegant and delicate at the same time. The tannin is
polished and fruity.
