Vinification process:
The grapes used to make this wine come
from plants over 30 years of age. The average harvest per hectare is
less than 5000 KG. The vineyards are planted at over 600 metres altitude
and the climate is combination of the contrast between high temperatures
during the day and the cool temperatures at night. This produces a grape
of great colour intensity, fruity and delicate tannins and a high tartaric
acidity which enables long ageing in the bottle.
Whole grape stripping is used. Maceration in stainless steel vats at
controlled temperatures is lengthy and remounting is short to extract
the tannin without losing the fruity character of the grape.
Ageing:
It spends 20 months in American oak casks
of varied age so as not to ruin the bouquet with excessive tannin from
the oak. The wine is decanted twice towards this end. It then spends
36 months in bottles in the bodega cellar.
Wine-tasting note:
Medium depth cherry colour, clean and
brilliant with a slight touch of clay-red. It’s frank and elegant
in the nose with aromas of ripe fruit to the fore. It has tones of vanilla
and coffee with a slight trace of pepper that adds a certain liveliness
and youth.
It’s warm and ample in the mouth, silky
at first with a lively and youthful finish. The tannin is delicate and
fruity. It still contains potent structure which ensures several years
of positive evolution.
