Vinification process:
The grape is destalked. The temperature is kept between 25 and 30ºC
during fermentation. Maceration lasts for about 25 days.
Ageing:
14 months in casks; 50% French and 50% American. A minimum of 10 months
in bottle.
Wine-tasting note:
Deep and brilliant reddish-cardinal purple. An intense aroma that combines
the ripe fruit with honey, a slight hint of mineral and the toasted,
smoked hue from the wood.
A slightly sweet taste in the mouth at first with a concentrated flavour
and potent structure. Ample and fleshy.
The finish is long and potent. The tannin is fruity but it still carries
a slightly stemmy hint typical of Garnacha. This will be rounded off
as the wine ages in the bottle.
