Grape variety: 70% Tempranillo, 30% Old Garnacha
Alcoholic content: 14%
PH: 3.64
Total acidity: 5

Characteristics:
This wine comes from a selection of very old Tempranillo and Garnacha vineyards on hillsides at an altitude of about 600 metres above sea-level. This height provides high temperatures during the day and coolness at night. The average crop per hectare, at about 4000 KG, is quite low. The soil is clayish, limy and quite poor. The grapes are harvested late; in the second fortnight in October. The ripening process is excellent and the grapes contain a high alcoholic content and tartaric acidity.

Vinification process:
The grapes are destalked and crushed. The wine is fermented with some stalk. Maceration lasts for 30 days and the wine is remounted daily. Each turning is short and oxygenated. Temperatures are kept between 22 and 30ºC.

Ageing:
Ageing begins in the bottle. Afterwards it spends 16 months in casks and is decanted twice.

Wine-tasting note:
Deep cherry peak with tones of purple. In the mouth it’s potent, fleshy and intense with the fruit standing out over the wood. Despite its structure, it’s delicate and silky. There is a slight edge to the wine due to its youth. This will become more polished as the wine ages in the bottle. It combines the characteristics of the fruity ripeness of the Tempranillo with the mineral hue added by the well-ripened Garnacha. Slight hints of coffee and honey.
The finish is long and persistent yet delicate and elegant. The tannin is potent and fruity at the same time.
