Vinification process:
The grape is destalked but left uncrushed
in stainless steel vats. Each variety is done separately. Maceration
lasts 25 days with temperatures kept between 22 and 28ºC. The wine
is remounted and oxygenated daily. The fermentation uses natural yeasts
which are generated previously by fermenting some of the grapes in the
vat the rest of the grapes will be put in.
The grapes come from old Tempranillo
vineyards and ten-year old Graciano vines. The crop is totally organic.
Ageing:
14 months in casks; 6 months in new barrels
and 8 years in three-year old casks. It spends at least 10 months racked.
Wine-tasting note:
This wine stands out for its originality
and elegance in both the mouth and nose. It’s well-structured
and has complex hues of fruit, spices and a slight touch of vanilla
from the oak. The finish is long, slightly acidic but pleasant. The
wine is still quite young and will become more whole with time. It shows
excellent prospects for ageing.
This is a wine of unique personality and characteristic of having been
elaborated with its own yeast. The substantial amount of Graciano used
affords its originality.
