The most important characteristics that identify a Biurko Gorri grape or wine are based on the following points:

Natural selection of the location of the vineyards, inherited from generation to generation.

Well-ventilated vineyards at high altitudes, planted on relatively poor soils which, due to their nature, limit production; a high number of sun days a year provide warmth during the day, while the high altitudes, ensure cool nights.

ainstaking treatment of the soil – its natural characteristics are always respected – and only organic animal and plant fertilizers are used.

The intention is to obtain a well-balanced soil that will ensure that the vines grow strong and are naturally protected against disease. Preventive plant health controls with natural elements (sulphur, copper in small quantities, clay, Marsh Horsetail, gender confusion techniques, etc…).
